Carbonara-Muffins

Hello my dears,

A friend of mine shared this recipe with me, and I am really thankful for that. After we both bought the book "Sweet and Easy - Enie backt" (Enie van de Meiklokjes), we tried out some new recipes as we both love baking. Well she is much more talented than I am, but I try my best! Sometimes I just improvise while baking but I think I will learn more by following some rules and recipes :)

Today I want to share with you this little awesomeness-recipe: Spaghetti-Carbonara-Muffins!

Perfectly served as an  "Apperitif"

Ingredients for 12 muffins:

  • Olive Oil
  • Spaghettis (1/2 spaghetti box, I prefer whole wheat spaghetti)
  • 3 eggs
  • 200g bacon (small slices)
  • Parmesan Cheese
  • 250ml Crème fraîche (for a healthier way try crème fraîche with 0.1% fat)

firstly put your spaghetti in boiled water and fry the bacon.

Directions:

  1. Fry the bacon in olive oil and boil your spaghettis till they are "aldente"
  2. Oil your muffin forms
  3. Put the eggs and 250ml crème fraîche in your measuring jug and add the spices you want (I prefer pepper, chili and parsley). Now mix!
  4. When the spaghettis are ready, put them into cold water! They need to be cooled.
  5. Put the spaghettis in your muffin forms and put some bacon on the top.
  6. Douse your spaghettis with the cream (only half of the muffin form)
  7. Garnish every spaghetti-muffin with 1 teaspoon of parmesan cheese
  8. Put your muffins for 25 minutes in the oven (180° and air circulation)
  9. After 25 minutes, take the muffins out of the oven and let them cool off. after they are cold, you can take them out of your forms. Now they are ready to be served.
